Japanese Tofu Curry
Ingredients
- 1.5 standard packages of firm tofu, cubed (600 grams)
- 1 tsp salt, split
- 1/4 cup Fresh Harvest Garlic EVOO, plus some for drizzle
- 1 medium chopped onion
- 1 tsp California Chili Powder
- 1 Tbsp Granulated Ginger
- 1 Tbsp Japanese Curry Powder
- 2 medium carrots, chopped
- 1 Tbsp brown sugar
- 1 can coconut milk
- Fresh cilantro, chopped
- 1/2 cup roasted, unsalted cashews
- Black pepper and salt to taste
Instructions
- Preheat oven to 350
- Drain tofu and cube, then place in a baking pan, drizzle with extra Garlic EVOO and season with 1/4 tsp salt. Bake for 30 minutes until tofu is brown. Remove from oven and set aside.
- In a fry pan, heat 1/4 cup Garlic EVOO over medium heat.
- Add onion and California Chili Powder powder and saute until onion is browned.
- Add Granulated Ginger and Japanese Curry Powder, mix gently
- Add carrots, 3/4 tsp salt and brown sugar and mix well.
- Add coconut milk and blend ingredients
- Let sauce cook over medium heat until thickened (about 15 min), add tofu
- Salt and pepper to taste and garnish with cilantro and cashews
- Serve with rice or udon or naan
