Japanese Tofu Curry

Ingredients

Instructions

  • Preheat oven to 350
  • Drain tofu and cube, then place in a baking pan, drizzle with extra Garlic EVOO and season with 1/4 tsp salt. Bake for 30 minutes until tofu is brown. Remove from oven and set aside.
  • In a fry pan, heat 1/4 cup Garlic EVOO over medium heat.
  • Add onion and California Chili Powder powder and saute until onion is browned.
  • Add Granulated Ginger and Japanese Curry Powder, mix gently
  • Add carrots, 3/4 tsp salt and brown sugar and mix well.
  • Add coconut milk and blend ingredients
  • Let sauce cook over medium heat until thickened (about 15 min), add tofu
  • Salt and pepper to taste and garnish with cilantro and cashews
  • Serve with rice or udon or naan
