Crockpot Chicken Chili

Ingredients

Garnish

  • Cotija or grated Cheddar
  • Sour cream
  • Guacamole or fresh avocado
  • Tortilla strips

Instructions

  • Heat oil in a large skillet over medium heat. Add chicken, onions, garlic. Sauté until chicken is lightly browned and onions/garlic are softened.
  • Put chicken mixture into the crockpot, add broth, beans, corn, tomatoes, chiles and spices. Stir to combine.
  • Cover and cook on low for 4-6 hours. Add salt to taste.
  • Want it creamy? Stir in a couple of ounces of cream cheese or
  • Garnish with cheese, sour cream, and/or guacamole when serving.
