Butter Chicken (InstaPot style)
Instructions
Set your Instant Pot to “Saute”. Add
- 3 Tbls Butter olive oil (or 4 Tbls butter)
- 1/2 cup finely chopped onion, and
- 1 Tbls minced Garlic
Saute for a couple of minutes until onion is soft and golden. Add
- 2 Tbls Madras Curry powder or African Curry powder
- 1 Tbls Kashmiri Garam Masala
- 1 Tbls Sweet Smoked Paprika
- 2 lbs chicken, cut into bitesize chunks
Saute 4-5 minutes, then add
- 1 – 15oz can tomato sauce
Fasten the cover, use the manual setting and set for 10 minutes at high pressure, then let sit for a natural release. Once the pressure has been released, switch to Simmer and stir in
- 1 cup Greek yogurt
- 2 Tbls dry Cilantro leaves or 1/4 fresh, chopped cilantro
Serve with basmati rice and/or naan
