Boss Banana Bread

Ingredients

  • 1/3 cup Butter olive oil or ½ cup unsalted melted butter
  • 3 Tablespoons Rooibos Tea – 1 oz of any variety will give you plenty
  • 2 Cups all purpose flour
  • 1 Teaspoon baking soda
  • ½ Teaspoon baking powder
  • ½ Teaspoon salt
  • Spices (Option 1 – Rooibos or Vanilla Chai)
  • Spice (Option 2 – Rooibos or African Breakfast)
  • Spice (Option 3 – Rooibos or Tumeric Cider for a spicier cake)
  • ½ Cup Greek yogurt or sour cream
  • 1 Teaspoon vanilla extract
  • 1 Cup brown sugar
  • 2 eggs
  • 2 Cups mashed overly ripened bananas
  • ¾ Cup chopped walnuts or pecans (optional)
  • 1-2 Tablespoons of Granulated Honey

Directions

  • Preheat oven to 350. Grease a loaf pan with non stick spray and set aside.
  • In a large bowl combine the tea and Butter olive oil (or melted butter) and set aside.
  • While the tea is steeping, combine the flour, spices (choose just one option), baking soda and baking powder in another bowl.
  • In the bowl with the tea/butter, whisk in the yogurt, vanilla and brown sugar. Whisk until fluffy. Next whisk in the eggs, then stir in mashed bananas and the nuts, if desired.
  • Slowly mix in the dry ingredients but don’t overmix.
  • Add the batter to the greased load pan, sprinkle granulated honey on top for a tasty crunch. Bake for 50- 55 minutes. Let cool for a bit.

Optional spread – Mix a teaspoon of Butter Pecan Balsamic into a 1/4 cup of softened butter and slather your slice of slightly warm bread. You won’t regret it.
